You lucky girl! If I had a ranch where I could feed my own hens and take care of them, I would eat eggs. I don't eat eggs because I don't trust what the hens are being fed and because I don't agree with the way chickens are treated in factory farms. I don't really see anything wrong with them otherwise! Shhh, don't tell the other vegans! ;) xo

Love your posts. I am steering myself more and more towards plant based diet. We have a huge organic garden and quite a few friends are strict vegan people. However I will never be able to give up on the eggs. Our hens are fed only organic feed and spend their time happily running around the ranch. Their eggs are delicious, the yoke is the color of Los Angeles sunset. I know, we loved there.

I wonder why eating eggs would be considered not animal friendly?

Cheers

So awesome, Jessica! That all sounds delicious. I can imagine tahini, nutritional yeast and turmeric would all make this extra egg-like and fantastic. And I love that turmeric will turn it more yellow... I am all about the way my food looks. So happy to hear that my posts have inspired you to begin your own fifty mile count. You got this, girl!! Thanks for reading!! Xo

--So glad to see you're enjoying tofu scramble; it's one of my favorite breakfast treats! I love making it and have made it for a bunch of friends (all non-vegans), who love it as well. Some of my favorite add-ins for future experimentation, include: a drizzle of tahini sauce, a sprinkle of nutritional yeast, and turmeric. Turmeric is especially fun as it gives the scramble a sunny egg-colored yellow. Also I love to top the scramble with some fresh chunks of avocado.

Congrats on training for a half-marathon! Your running posts have inspired me to begin my own fifty mile count. :) Keep up the lovely posts!
