I don't follow a specifically gluten-free diet, but I generally avoid overloading on it. I have not had much experience with gluten-free bread, although I didn't mind Udi's. My favorite is Ezekiel bread, which I know is not gluten-free, but the sprouted grains seem to work fine for my digestion. I love keeping their English muffins in the freezer so I can just take one out whenever I am in the mood for toast, but I never have to worry about eating the whole bag in one week.
I love all of the topping ideas you included and I just wanted to share another I thought you might enjoy. It's really hard for me to not default to almond or peanut butter on toast because, let's be real, ITS DELICIOUS, but one time I spread coconut manna/coconut butter on my Ezekiel English muffin and added a few shakes of cinnamon on top. It was so simple, but so tasty! Give it a try if you can find a way to add another combo into your lineup of delicious toasts!

No way, I am so sorry that your Julian bread was so bad!! I have had the soggy experience too which is why I said it MUST, must be heavily toasted in order for it to taste good. I keep mine in the freezer and usually let one piece sit out over night and then I toast it in the morning! But I agree it is not the easiest bread to eat.. I wish g-free products were easier! The BEST is making your own, but its def the most time consuming. :)

Julian Bakery has been the subject of FDA investigations and enforcement actions. Their products have been deemed misbranded (http://www.fda.gov/ICECI/EnforcementActions/WarningLetters/2014/ucm407036.htm). If you google them you can find many people who have done laboratory testing and have found the carb/calorie/nutritional counts to be grossly understated (example- http://livinlavidalowcarb.com/blog/julian-bakery-customer-tests-low-carb-bread-claims-requests-they-immediately-cease-sales/14568 [scroll down for nutrition analysis]). Love your site, but just an fyi!

Those toasts look so good! btw, and just my 2 cents, but I HATED Julian Bakery Paleo bread. I mean it was awful. I thought maybe I got a bad batch, but I just went and read the amazon reviews of it and it looks like a lot of people had the same experience as me. I had to throw the rest out and it is expensive and I don't throw food out, but I just couldn't eat it. I got it at a local food co op in the freezer and then put it in the fridge when i brought it home and it got soooo soggy from sitting in the fridge. I didn't think it would be a problem bc that doesnt happen with ezekial bread. How do you store it? Anyways, I guess I would encourage people to read the amazon reviews of that bread before buying it bc a lot of people have had issues with it and it's expensive. I'm jealous that you love it so much because I was so excited to try and when I first got it!
